Bikini Recipe

Makes enough for 10 guests

To make the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Premix (produces 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Method

To prepare the Cordial: Place all the items in a pan, heat until it reaches a light boil, agitating so the sugar melts. Then, remove from the burner allowing it to reach room temperature entirely. Transfer to a sealable bottle, seal and store in the fridge, where it will keep for about a month.

To make Premix: Combine every spirits and syrup into a large bottle, let it rest for 60 minutes, then pass it through best through muslin, so it's completely strained.

To serve: Add 85ml of the batch mix into a cocktail shaker packed with ice, and agitate carefully for about 60 seconds to chill. Pour to a frosted cocktail glass or equivalent, decorate with the cranberries adding the final touch using a brief mist of mandarin oil over the top.
